Good Morning! How has your weekend been?
My weekend has been a mix of busy and relaxing so I’ve enjoyed that! We’re heading for lunch with Matthias’ family soon, but I wanted to pop in to share what we ate this past week!
Weekly Meal Plan: Week of 11/8-11/14
Sunday: this was our last night in Sweden and we just wanted something chill so we ate at the restaurant in our hotel. We both got pizza and a beer. I had ham on mine while Matthias had a chicken pizza. Monday: after travelling home and getting groceries, we both wanted something easy for supper. We ended up having ribs with veggies!Tuesday: since I was on my own for supper on Tuesday, I just made chicken and sweet potato coins! Another easy, yet delicious meal. Wednesday: again, we wanted some easy. We made pesto salmon and I had some cucumber and tomatoes on the side so we had some kind of vegetable. There were more, but I ate most of them before the salmon was ready. Thursday: we had been wanting to make lasagna again for awhile so we finally did on Thursday! The best part about making a big lasagna for two people is leftovers!Friday/Saturday: lasagna leftovers!
As you can see, all of our meals this week were extremely easy. The hardest one was the lasagna and it only takes an extra twenty minutes of prep work plus cooking time.
The plan for this week is easy again! We’ll be leaving for another trip on Thursday so there isn’t too many meals we’ll have to prepare.
