Good Morning! How has your weekend been?
I’m currently in Sweden, but I wanted to share with you what we ate this past week. I’m writing this before leaving on our trip so I won’t have Friday or Saturday’s suppers included, much like last week when we were on the cruise. I hope I’m able to give some ideas for your own meals!
Weekly Meal Plan: Week of 11/1-11/7
Sunday: Matthias and I had a late lunch and snacked on candy all afternoon so we weren’t really hungry for supper on Sunday. I ended up having a pb&j and it was delicious.
Monday: ribs and spaghetti squash! These were so good and really easy since the ribs were precooked. I only had to put them in the oven for 20 minutes!Tuesday: we had spaghetti on Tuesday! Mine was with spaghetti squash and Matthias had his with actual spaghetti! For the sauce, I cooked ground beef then added red pepper and tomato sauce to it. It would have been nice if it was saucier, but we didn’t have that much tomato sauce left. We had it with garlic bread on the side!Wednesday: a big chicken salad! Fun fact, I have a whole mini romaine lettuce head in my salad. There’s also tomatoes, cucumber, chicken, and honey mustard dressing!Thursday: pizza! Matthias had a frozen pizza and I used our last dough ball and made a Hawaiian one! There was ham, pineapple, red pepper, mozzarella cheese, and tomato sauce that I made by cooking tomatoes on the stove then mashing.Friday and Saturday: away in Sweden
